Chipotle taco beef

Ingredients

  • One can chipotle peppers in adobo
  • 2 large poblano peppers
  • 2 large tomatoes or equivalent
  • 3-4 tomatillos
  • 1.5 white onion, divided
  • Beef roast boneless

Directions

  1. Salt and pepper the roast and brown in a pan then put in the crockpot

  2. Throw in the can of peppers

  3. Lay the remaining ingredients on a baking pan and preheat the oven to 425

  4. Let veggies roast for 15 min then flip and let roast 15 more

  5. Pull out veggies and put into crockpot

  6. Crockpot on high 5 hours and use immersion blender around 4 hours to blend veggies

  7. Shred beef and use with corn tortillas, cojito cheese, lime, cilantro or whatever you please
