Basil Pesto Pasta with Zucchini and Mint

Ingredients

  • 1 pound dried pasta
  • 1 garlic, small clove
  • 1/4 cup pine nuts
  • 3 cups basil leaves, washed, loosely packed, fresh
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2/3 cup olive oil, extra-virgin
  • 1/4 cup Parmesan, (about 1 ounce) grated
  • 1 tablespoon olive oil
  • 2 zucchini, small, thinly sliced
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1/4 cup mint leaves, torn, fresh

Directions

  1. Cook the pasta according to the package directions.

  2. Place the garlic, pine nuts, basil, salt, and pepper in the bowl of a food processor and pulse to combine.

  3. While the machine is running, drizzle in the oil through the feed tube, stopping occasionally to scrape down the sides.

  4. Transfer to a bowl and stir in the Parmesan. Spoon over the cooked pasta.
