Sponge cake

(from maude’s recipe box)

Ingredients

  • Self rising flour
  • Butter room temp
  • Superfine sugar
  • Vanilla
  • Room temp eggs

Directions

  1. 1 C butter

  2. 1Cplus 2 T superfine sugar

  3. 1T vanilla extract

  4. 4 eggs

  5. 1 3/4 Self rising flour

  6. Prepare pans – butter pan, parchment

  7. Beat butter. 1 Minute

  8. Add sugar

  9. Add vanilla

  10. 1/3 of flour

  11. Add eggs 1 at a time

  12. Add remaining flour just beat to mix

  13. 350 degrees for 20-25 minutes

  14. Jam onto first layer

  15. Then

  16. Middle layer is first jam folded in whipping cream that is whipped

  17. Then add strawberries that have been macerated

  18. Add 2nd cake layer

  19. Too with sifted powdered sugar
