Watermelon Blueberry Feta Salad

Ingredients

  • 6 C diced Watermelon (1/2 - 3/4" thick)
  • 1 pint Blueberries, rinsed & drained
  • 1 Tbsp Champagne Vinegar
  • 1 Tbsp Olive Oil
  • Pinch of Salt
  • Pinch of Black Pepper
  • w Tbsp chiffonaded fresh Mint
  • 2-3 oz crumbled Feta Cheese
  • 2 Tbsp finely chopped Pistachios

Directions

  1. In large bowl toss watermelon, blueberry & sliced mint.

  2. In small jar or bowl whisk together champagne vinegar, salt & pepper. Slowly whisk in olive oil. Pour over fruit & use a rubber spatula to gently combine

  3. Tip the dressed fruit along with some of the juices onto a serving dish or into a bowl and top with feta cheese, chopped pistachios, more black pepper & mint.

  4. Serve Immediately
