Linguini and Peppers with feta

I have made this with whole wheat linguini as well…works great!

Cook time: 25 minutes
Serves 4 people

Ingredients

  • 2 T olive oil
  • 2 cloves garlic, minced
  • 2 tsp fresh rosemary, chopped
  • 1 28oz can diced tomatoes
  • 4 tsp fresh oregano, chopped
  • 3 peppers (red, green, and yellow)
  • 3/4 tsp salt
  • 1 lb linguini
  • 6 oz feta cheese

Directions

  1. Brown the garlic and rosemary in the olive oil for 2 mins.

  2. Add tomatoes and cook for 10 mins stirring occasionally.

  3. Add oregano, peppers and salt and cook for 12-15 mins stirring occasionally (until peppers are consistency you like).

  4. Spoon over cooked linguini and top with feta cheese.
