Fajita Chicken

Ingredients
- 1 lb Farfalle
- 2 Tbsp Olive Oil
- 1 1oz pkg Fajita Seasoning
- 3/4 lb boneless, skinless chicken tenders rubbed w/ fajita seasoning & cut into 2" pieces
- 3 small red, yellow or orange bell peppers, seeded & cut into 1/4 x 2" strips
- 1 1/2 C Half & Half
- 1/4 C grated Parmesan
Directions

Cook farfalle until al dente, about 10 minutes

Drain, reserving 1/2 C cooking water

Return pasta to pot

In large skillet warm oil over medium heat

Add chicken to skillet & cook 4-6 minutes until cooked through

Remove to plate & cover

Cook bell peppers in skillet, stirring, until just tender, approx 8 minutes.

Add chicken, half & half & stir to scrape up browned bits

Cook 3 minutes, stirring until thickened

Stir in parmesan & cook 30 seconds

Season with salt & pepper

Toss chicken mixture with past – add some pasta water if mixture seems dry.

Serve with parmesan
