Strawberry Bread w/ Spread

(from gabjos’s recipe box)

Ingredients

  • 3 c flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 2 c sugar
  • 1 tsp salt
  • 2 (10 oz) packages frozen strawberries thawed and sliced
  • 1 1/4 c veg oil
  • 4 eggs well-beated
  • 1 c chopped pecans

Directions

  1. Reserve 1/2 c strawberry juice for spread

  2. Mix all dry ingredients together

  3. Make a hole in the center of mixture

  4. Poor strawberries, oil and eggs into the hole

  5. Mix by hand until all ingredients are thoroughly

  6. combined.

  7. Stir in the chopped pecans pour into 2 greased and flowered loaf pans

  8. Bake at 350 for 40-60 minutes

  9. Spread:

  10. 1/2 c strawberry juice

  11. 8 oz cream cheese, softened

  12. Place both in blender

  13. Process until spreading consistency

  14. Spread on cooled bread
