Ingredients
- 2 zucchini shredded
- 2 cloves garlic
- 1 1/4 c fresh bread crumbs-used 3/4 c store bought
- 1/2 c minced parsley leaves
- 1 t fine sea salt
- pepper
- 1/2 t dried oregano
- 2 large eggs
- 2/3 c grated pecorino romano cheese- or grated parmesian
- 1/2-1/3 c flour
- oil to fry-or can bake them
Directions

oven 350 degrees

spread zucchini on cookie sheet, turn off ioven and leave squash in 2-3 hours(removing excess water)

In large bowl combine garlic, breadcrumbs, parsley, salt, pepper, oregano.eggs and cheese.

coarsely chop zucchini and add to mixture. Chill for 2 or more hours

Form into meatball size

dredge in flour

Fry in cannola oil or bake 350 for 25-30 minutes in oiled casserole
