caramel toffee ice cream

Ingredients

  • 2 t vanilla
  • 1 C sugar
  • 1/4 C water
  • 1 1/2 C cream
  • 1 C milk
  • 8 egg yolks

Directions

  1. on medium low heat boil sugar & water until deep amber-remove from heat

  2. add cream (mix will bubble)

  3. stir over low heat until all caramel dissolves

  4. add milk-bring to simmer

  5. whisk yolks in large bowl

  6. gradually mix caramel mix into yolks

  7. return custard to saucepan & stir over medium low heat until it thickens-do not boil

  8. add vanilla

  9. refrigerate

  10. finish in ice cream maker

  11. add chopped toffee when ice cream maker has ice cream fairly solid
