Orzo Cauliflower Sweet Potato Bake

Roast sliced sweet potatoes and cut up cauliflower, tossed with olive oil salt and pepper, paprika

Bake 350 til crispy

Melt butter and add chopped onion, garlic, thyme and orzo. Let orzo toast up, add broth and nondairfy milk. Simmer til all liquid has been absorbed. Add vegan parmesan and toss. Add a handful of arugula and toss.

Plate up orzo with roasted vegetables and a little hummus for dipping.
