Hot Potato Salad with Bacon

Ingredients

  • 9 potatoes
  • 1/2 lb. bacon, diced
  • 1/2 c. onions, chopped
  • 1/4 c. white wine or cider vinegar
  • 1/4 c. water
  • 1/2 tsp. salt
  • 1/4 tsp pepper
  • 2 Tbsp. parsley, chopped

Directions

  1. Boil whole and unskinned potatoes in water until easily pierced with a fork. Not too soft so they don’t fall apart when slicing.

  2. Drain, peel, and slice into 1/4 inch slices.

  3. Set aside and wrap in aluminum foil.

  4. Cook bacon over moderate heat until brown and crisp. Drain over paper towel.

  5. Add onions to bacon fat in pan stirring for 5 minutes or until soft and transparent but no brown.

  6. Stir in vinegar, water, salt, and pepper. Cook for a minute or so.

  7. Pour over potatoes and coat evenly.

  8. Gently stir in bacon.
