Vivianna’s Enchiladas

Equipment you will need: 10" skillet, 9 × 13 baking pan, cheese grater, cooking spoon.

Serves 8 people
Ingredients
- 12 Corn tortillas
- 1/4 cup avocado oil
- 1 lb. ground beef
- 1 cup diced onion
- 1 teaspoon salt
- 1 jar of guiso sauce
- 1/2 cup of water
- 1 jar of red Chile sauce
- 1-2 cups grated cheddar cheese depending on how much cheese you like
Directions

Add the avocado oil to a skillet and add the ground beef; break it up and add the salt.

Cook the meat until brown; add the guiso sauce and water. Cook for about 15 minutes on medium heat. Remove meat from heat and set aside.

Heat up a grill or iron skillet until hot. Heat the corn tortillas 6 at a time. Lower the heat on the skillet while you put the meat filling in the 6 tortillas.

At this point, turn your oven on to 350 and let it heat up

Add 4 tablespoons of meat filling to the first 6 tortillas and roll the up. Arrange them, seam down, in a 9 × 13 inch baking pan.

Bring the heat up on the iron skillet until hot and heat the next 6 corn tortillas. Once you finish heating the tortillas turn off the heat. Add the meat to the next 6 tortillas and arrange them, seam down in the baking pan next to the others.

Add the Chile sauce to cover all the rolled tortillas. Add the grated cheese on top and put the pan in the oven and allow to cook for about 20-30 minutes or until cheese is melted and hot.
