Ingredients
- mix with mixer
- 4 eggs
- 1 1/2 C brown sugar
- 1/2 C sugar white
- 1 1/2 C canola oil
- 1 C chopped pineapple
- 1 t vanilla
- Mix well.
- ADD
- 3 C grated carrot
- Combine Dry in gredients-Stir with whisk
- 2 C all purpose flour
- 2 t baking powder
- 1 t baking soda
- 1 1/2 t cinnamon
- 1/2 t ginger
- 1/4 t nutmeg
- 1/2 t salt
- Add wet ingredients into dry ingredients by hand mixing just enough to combine
- Bake 350 degrees for 25-30 minutes****I only baked 26 minutes
- Use cake pans, greased and floured with parchment paper
- Frosting:
- Cream cheese frosting
- 8 ounces softened cream cheese
- 1 stick softened butter
- 3 C powdered sugar
- 1 t vanilla
- Toasted walnuts on top as desired
