Ingredients
- 6 C diced Watermelon (1/2 - 3/4" thick)
- 1 pint Blueberries, rinsed & drained
- 1 Tbsp Champagne Vinegar
- 1 Tbsp Olive Oil
- Pinch of Salt
- Pinch of Black Pepper
- w Tbsp chiffonaded fresh Mint
- 2-3 oz crumbled Feta Cheese
- 2 Tbsp finely chopped Pistachios
Directions

In large bowl toss watermelon, blueberry & sliced mint.

In small jar or bowl whisk together champagne vinegar, salt & pepper. Slowly whisk in olive oil. Pour over fruit & use a rubber spatula to gently combine

Tip the dressed fruit along with some of the juices onto a serving dish or into a bowl and top with feta cheese, chopped pistachios, more black pepper & mint.
