Ingredients
- Bottom Round Roast
- 1 tsp Parsley
- 2 tsp Basil
- 2 tsp Thyme or Rosemary
- 2 tsp minced Garlic
- 1 tsp Black Pepper
- 1 tsp Sea Salt
Directions
- Preheat oven to 170

Dry roast with paper towels

Brush with olive oil

Rub combined seasoning all over

Insert meat thermometer

Place in roasting pan, fat side up

Cook 2 hours/lb until temp reaches 120
-
Tent with foil & rest 10 minutes to 2 hours

20 minutes before eating preheat oven to 500-550
-
Remove foil & return roast to oven for 10-12 mintues.

Remove & slice (no need to rest again)
