Cocoanut Cake Grandma Margaret

Ingredients
- bake 350 degrees
- 8 inch pans with spray, parchment and dusted
- 2 1/2 C cake flour
- 1 t baking powder
- 1/2 t soda
- 1/4 t salt
- 5 large eggs
- 3/4 C buttermilk, room temperature
- 1 t vanilla
- 2 1/2 sticks SALTED BUTTER
- 2 1/4 C white sugar
- FROSTING
- 6 sticks SALTED butter
- 6c powdered sugar
- 1/2 C half n half or cocoanut milk
- 2 t vanilla
- 2 C sweetened cocoanut
Directions

In bowl whisk together flour, baking powder. baking soda and salt

in another bowl mix together eggs, buttermilk and vanilla

In mixer beat butter and white sugar until fluffy-4-5 minutes

with beater on low add 1/3 flour mixture, half the egg mixture, 1/3 flour mixture, rest egg mixture and last of flour

Then increase speed to medium and beat at least another 1 minute.Fold batter with spatula to get any dry flour from sides or bottom

Divide batter evenly between prepared pans

Bake 15 minutes and quickly move upper pans to bottom and bottom to upper

Bake til toothpick clean about another 12 minutes COOL CAKE

FROSTING
-
Beat butter about 1 minute

With mixer on low add 1/3 powdered sugar until fully incorporated

Beat 1/3 more sugar and beat 2-3 minutes

Gradually add remaining sugar beating until incorporated-2 minutes

Add the half and half and vanilla

Beat on low about 1 minute

Scrape bowl , increase speed and beat about 1 minute more

Each layer has 3/4 C frosting topped with cocoanut
