Ingredients
- 260 grams-2 C-all purpose flour
- 1 t baking powder
- 1/4 t salt
- 1 C milk
- 4 large eggs-room temp
- 428 grams-2 C sugar- white divided
- 1 T orange zest
- 1 t vanilla
Directions

heat oven 325 with a rack in middle

9 inch tube pan with removable bottom

in bowl combine dry ingredients

Beat egg yoks with 1 C sugar-until pale yellow and about doubled in volume 3-4 minutes-scrape down side of bow

Heat milk untl 185 degrees-set asidel

With mixer running on low slowly add warm milk, scrape bowl.

Add vanilla and beat about 1 minute

mixer on low add flour mixture in 1/3’s-mixing until almost incorporated, about 30 seconds each time

remove bowl from mixer and gently fold to be sure flour is incorporated

In clean bowl, with whisking attachment, whip egg whites on medium high until light and foamy- about 1 minute

mixer running- gradually add remaining 1 C sugar and continue whipping until whites are thick and glossy and hold VERY droopy, soft peaks, about 2 minutes

Using spatula, add 1/3 egg whites in batter until mostly combinedGently fold in remaining egg whites until no streaks remain. Batter is light and airy, but pourable.

Pour into UNGREASED tube pan.

Bake until golden brown and toothpick, inserted 2 inches from edge, comes out clean.

Immediately invert pan. cool 1 hour

Remove from pan after 1 hour
