Ingredients
- put out 3 1/2 sticks butter to become room temp
- 2 eggs
- 2 1/2 C whole milk

- 6 T flour
- 1 C milk until forms mixture consistency of mashed potatoes WHISKING CONTINUALLY
- COOKIE;
- 1 1/2 sticks room tamp butter
- 1 1/2 C white sugar
- 2 eggs room temp
- 1 1/2
- C whole milk, room temp
- 3 C all purpose flour
- 3/4 C Dutch processed cocoa powder
- 3/4 t baking powder
- 2 1/4 t baking soda
- 1/2 t kosher salt
- FILLING:
- 1 C whole milk
- 6 T flour
- 2 sticks room temp butter
- 1 C white sugar
- pinch kosher salt
- 2 t vanilla
Directions

make cookies:

PREHEAT OVEN 350

parchment on cookie sheets

MEDIUM SPEED
-
cream butter and sugar until incorporated

Add vanilla-beat slightly

Add eggs 1 at a time and beat until incorporated

SEPARATE BOWL; DRY INGREDIENTS

cocoa
-
baking powder
-
baking soda
-
salt
-
Sift dry ingredients into wet

Beat on medium until just combined=no streaks of flour visible

SPOON ONTO COOKIE SHEETS

2 T and 2 inches apart

BAKE

12=14 minutes

Transfer to rack and let cool completely

MAKE FILLING

beat butter just until light and fluffy
