Pasta w/garlicky greens and beans

Ingredients

  • 1 T olive oil
  • 6 cloves garlic, pressed
  • 1 red bell pepper, diced
  • 1 bunch kale, washed and chopped, stems removed
  • 1/4 c. chicken broth
  • 2 T balsamic vinegar
  • 1 lb ziti pasta
  • 2 cans cannellini beans, drained
  • 1/2 c. Romano cheese, grated
  • freshly-ground black pepper

Directions

  1. In a large pan, heat olive oil over medium-high heat.

  2. Add garlic and red pepper and sauté 2 minutes – do not let garlic brown.

  3. Add kale and cook 1 minute.

  4. Add broth and vinegar, cover pan, and cook until kale is wilted, about 5 minutes.

  5. Meanwhile, start cooking pasta.

  6. When kale is cooked, add beans and incorporate.

  7. Add pasta and toss gently.

  8. Serve w/Romano cheese and black pepper on top.
