Directions

Salmon skin on filets, season with

Salt and pepper

Cajun seasoning

on both sides (be generous)

Set aside

Salsa
-
Halve and quarter cherry tomatoes different colors

Sliced green onions

Chopped basil
-
Hull and slice avocado and squeeze with lime and dice

Chopped mango

Season with salt and lime juice

Cook salmon skin side down (on barbeque in summer) til skin is crispy

Turn and cook on other side Peel off the skin and cook it a bit more let cool over a rolling pin

Flatbread
-
4 heaping tablespoons of self rising flour

4 Tbsp water
-
Dash salt
-
Dash oil
-
Knead and divide into four
-
Roll out into circles (use a bowl if you want a perfect shape)

Place on cooktop or barbeque til brown on one side and just a little on the other

Assembly:

Spread a little yogurt down the center of the flatbread

Flake salmon on top

Salsa and a little juice

Crumbled crispy salmon skin and a little chopped basil

Top with a little chili oil
