Chocolate Peanut Butter Fudge Cake

Buttermilk alternative:
1 tsp white vinegar plus enough milk to make 1 cup
Allow to sit for 10 minutes

Ingredients
- 2 cups sugar
- 2 cups flour
- 1 tsp baking soda
- 2 sticks butter
- 4 tbsp cocoa powder
- 1 cup water
- 1/2 cup buttermilk
- 2 eggs, beaten
- 1 tsp vanilla
- *1.5 cup smooth peanut butter
- *1.5 tbsp oil
- **1 stick butter
- **4 tbsp cocoa powder
- **6 tbsp buttermilk
- **16 oz powdered sugar
- **1 tsp vanilla
Directions

Combine sugar, flour, and baking soda in a large bowl and set aside

In a medium saucepan, bring to a boil 2 sticks butter, 4 tbsp cocoa powder, water, and 1/2 cup buttermilk

Stir in beaten eggs and vanilla then combine with dry mixture

Pour into greased 15×10×1 jelly roll pan and bake at 350* for 25 minutes; cool completely in pan

For peanut butter layer (*), mix together peanut butter and oil then spread over cooled cake

For fudge frosting (**), bring to a boil 1 stick butter, 4 tbsp cocoa powder, and 6 tbsp buttermilk

Pour over powdered sugar and add vanilla; stir well

Spread evenly over peanut butter layer on cake
