Ingredients
- 2 T olive oil
- 1 1/2 cups sweet onion, chopped
- 3 cloves of garlic, minced
- 1/4 c water
- 1 10-oz package spinach, fresh and chopped
- 2 cups plum tomato, chopped
- 2 cups chicken breast, cooked and chopped
- 2 slices bacon, cooked and crumbled
- 3 T balsamic vinegar
- 1 lb Angel Hair pasta, cooked
- 1 oz (1/4 c) Asiago cheese, shredded
Directions

Heat olive oil in a skillet over medium-high heat. Add onion; sauté 2 minutes. Add garlic; sauté 1 minute. Add water and spinach; cover and cook 2 minutes or until spinach wilts.

Stir in tomato, chicken, bacon, and vinegar; cook 1 minute or until thoroughly heated.

Serve over pasta; sprinkle with cheese.
