Franklin was my first cousin…my kids all called him Grandpa Franklin. I sure wish my grand children could have known him.

Ingredients
- 2-4 Medium to large Potatoes
- 1 stick butter or margarine
- salt to taste
- water as needed
Directions
-
You can use potatoes with skin or you can peel them.
-
Melt the butter in the electric skillet.
-
Cut each potato in half lengthwise.
-
Place cut surface down in butter. Add just a tad of water so the stream can help cook your potatoes. Cover…setting the skillet to about 250-275 degrees.
-
Check occasionally to make sure potatoes ae cooking and add a little more water if necessary. Using a spatula make sure potatoes are not sticking to skillet.
-
The potatoes should be done in about 45 minutes. Check with a fork to make sure they are tender.
-
You can serve as is…but we like to place on our plate and dress like you would dress a baked potato…butter, sour cream, cheese, bacon…etc.
