Franklin Potatoes

Franklin was my first cousin…my kids all called him Grandpa Franklin. I sure wish my grand children could have known him.

Ingredients

  • 2-4 Medium to large Potatoes
  • 1 stick butter or margarine
  • salt to taste
  • water as needed

Directions

  1. You can use potatoes with skin or you can peel them.

  2. Melt the butter in the electric skillet.

  3. Cut each potato in half lengthwise.

  4. Place cut surface down in butter. Add just a tad of water so the stream can help cook your potatoes. Cover…setting the skillet to about 250-275 degrees.

  5. Check occasionally to make sure potatoes ae cooking and add a little more water if necessary. Using a spatula make sure potatoes are not sticking to skillet.

  6. The potatoes should be done in about 45 minutes. Check with a fork to make sure they are tender.

  7. You can serve as is…but we like to place on our plate and dress like you would dress a baked potato…butter, sour cream, cheese, bacon…etc.
