palak paneer (saag is the general leafy green)

Serves 3 people

Ingredients

  • 1/2 bag of frozen spinach defrosted (assuming TJs 1lbs bag)
  • 2 green chiles
  • 10 cashews
  • 150 g of paneer cubed small
  • 1/8 tsp cumin seeds
  • 2 green cardamom pods
  • 2 cloves
  • 1/2 inch+ cinamon
  • 1 small to mid size onion chopped finely
  • 1 reasonable clove of garlic, minced
  • 1 tsp ginger, minced
  • 2 small tomatoes chopped
  • 3/4 tsp garam masala

Directions

  1. deseed chile and saute with cashews then put them in the the imersion blender cup with the spinach and some water

  2. put the cheese in the pan and brown it just a bit but don’t let it melt!

  3. (each addition ~ 2 min apart) saute the 4 whole spices until fragrant.

  4. Add onion and saute until transluscent/golden.

  5. Add garlic and ginger and saute until soft and fragrant.

  6. Add tomatoes and cook until mushy.

  7. Add garam masala, keep cooking.

  8. Add a bit of water and cook some more

  9. While cooking add some water to the immersion blender cup and get it all really smooth

  10. Add the spinach and just let it bubble a bit. If you cook it too much it gets less green and it’s better to be greener.

  11. Add the paneer and serve
