Chocolate Peanut Butter Fudge Cake (1/2 recipe)

Buttermilk alternative:
1/2 tsp white vinegar plus enough milk to make 1/2 cup
Allow to sit for 10 minutes
Prep time: 20 minutes
Cook time: 30 minutes
Serves 8 people
Ingredients
- 1 cup sugar
- 1 cup flour
- 1/2 tsp baking soda
- 1 stick butter
- 2 tbsp cocoa powder
- 1/2 cup water
- 1/4 cup buttermilk
- 1 egg, beaten
- 1/2 tsp vanilla
- *3/4 cup smooth peanut butter
- *2.5 tsp oil
- **1/2 stick butter
- **2 tbsp cocoa powder
- **3 tbsp buttermilk
- **1 cup powdered sugar
- **1/2 tsp vanilla
Directions

Combine sugar, flour, and baking soda in a large bowl and set aside

In a medium saucepan, bring to a boil 1 stick butter, 2 tbsp cocoa powder, water, and 1/4 cup buttermilk

Stir in beaten egg and vanilla then combine with dry mixture

Pour into greased 7×11 pan and bake at 350* for 22 minutes; cool completely in pan

For peanut butter layer (*), mix together peanut butter and oil then spread over cooled cake

For fudge frosting (**), bring to a boil 1/2 stick butter, 2 tbsp cocoa powder, and 3 tbsp buttermilk

Pour over powdered sugar and add vanilla; stir well

Spread evenly over peanut butter layer on cake
