queso sauce on enchiladas

Ingredients

  • 2 T butter
  • 2 T flour
  • Make roux
  • Add 1 1/2 C chicken stock
  • add 1 1/2 C heavy cream
  • 5 oz fresh spinach
  • 1/2 t salt
  • 1 t white pepper
  • 1/2 t garlic powder
  • 8 0z Monterey jack or 4 cheese mexican cheese
  • Enchilada filling:
  • 1 C onions chopped
  • 2 minced garlic cloves
  • 15 oz fresh spinach
  • enchilada shells-torillla shells
  • BROWON TORTILLAS IN SKILLET-no oil
  • fill with filling
  • top with queso sauce and extra cheese
  • Bakke 375 for 15 minutes
