Ingredients
- 2 T butter
- 2 T flour
- Make roux
- Add 1 1/2 C chicken stock
- add 1 1/2 C heavy cream
- 5 oz fresh spinach
- 1/2 t salt
- 1 t white pepper
- 1/2 t garlic powder
- 8 0z Monterey jack or 4 cheese mexican cheese
- Enchilada filling:
- 1 C onions chopped
- 2 minced garlic cloves
- 15 oz fresh spinach
- enchilada shells-torillla shells
- BROWON TORTILLAS IN SKILLET-no oil
- fill with filling
- top with queso sauce and extra cheese
- Bakke 375 for 15 minutes
