Crockpot Garlic Parmesan Chicken and Potatoes

Ingredients

  • 1 lb. chicken breast
  • 5 medium sized potatoes
  • olive oil + salt, pepper, garlic powder, paprika (for potatoes).
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. paprika
  • 1 tsp. onion powder
  • 1 tsp. Italian seasoning
  • 2 Tbsp. garlic, minced
  • Buffalo Wild Wings Garlic Parmesan Sauce (just enough to cover the chicken).
  • 1 c. mozzarella cheese, shredded

Directions

  1. Spray crockpot with cooking spray

  2. Scrub and rinse off about 5 medium sized potatoes. Chop the potatoes into small cubes.

  3. Next, add 2 TBSP of olive oil to the potatoes and season with salt, pepper, garlic powder, and smoked paprika. I don’t use exact measurements for this part.

  4. After that, add 2 TBSP of minced garlic to the potatoes and give everything a good stir.

  5. I like to cube up the chicken for this recipe, but you could also leave the chicken whole. Add the cubed chicken on top of the potatoes and season with salt, pepper, onion powder, paprika, and Italian seasoning.

  6. Next, I add the Garlic Parmesan Sauce from Buffalo Wild Wings. Your favorite brand of Garlic Parmesan Sauce is fine too! I like to just add enough of the sauce to cover the chicken. You can always add more of the sauce after the meal is cooked if needed.

  7. This is going to cook on low for about 6 hours or until the chicken reaches at least 165 degrees and the potatoes are tender.

  8. Finally, once the potatoes are tender and the chicken is fully cooked I like to stir everything together and top it with some shredded mozzarella cheese. I let the crockpot meal sit for about 10-15 minutes until all the cheese is melted!

  9. Now it’s time to eat! We served this with some green beans and added some ranch on top of the chicken and potatoes!

  10. Tips…

  11. Depending on the size of your potatoes, they may need additional time in the crockpot. All crockpots cook differently so adjust the cooking time as needed.

  12. Use freshly minced garlic or jarred minced garlic for this recipe.

  13. When seasoning your potatoes, I just eyeball this part. You may add as much as you would like.

  14. Grate a block of mozzarella yourself for a creamier melted cheese.

  15. Onions can be added to this dish for extra flavor and a bit of crunch.

  16. I like using the Buffalo Wild Wing’s brand Garlic Parmesan Sauce, but you can use your favorite or make a homemade version.

  17. For the sauce I only add enough to cover the chicken. The sauce has a little bit of a kick to it and adding too much could make this a spicy dish. You can always add more sauce later if needed.
