Egg Drop Soup

Ingredients

  • 2 cups chicken broth
  • 2tbsp corn starch
  • 2 eggs
  • salt
  • pepper
  • soy sauce
  • peas (optional)
  • carrots (optional)
  • corn (optional)
  • green onion (optional)
  • mushrooms (optional)

Directions

  1. Heat 2 cups chicken broth

  2. Combine 2tbsp corn starch with room temperature water to make corn starch slurry

  3. Combine corn starch slurry with chicken broth in rice cooker

  4. Turn rice cooker on, bring broth to a boil

  5. Add any veggies (corn, peas, carrots, etc)

  6. Crack two eggs, season with salt, pepper, any other spices, beat until combined

  7. Once boiling, slowly pour eggs in while stirring broth

  8. Season to taste with salt, pepper, soy sauce, sesame oil, any other spices.
