Amarillos (Fried Sweet Plantains)

Ingredients
- 2-3 plantains, ripe, turning black
- 5 Tbs butter, divided
- 1 tsp cinnamon
- 1 tsp vanilla
- 2 Tbs brown sugar
Directions

To peel the plantains, cut off ends and discard. Make 3 shallow slits lengthwise along the seams of the skin and peel away. Split the plantains lengthwise.

Heat 4 Tbs butter in large pan over medium/low heat. Fry in a single layer until golden and turn over.

Add cinnamon, vanilla, and sugar. Cook for a few seconds to carmelize sugar. Add remaining butter to sauce and serve immediately.
