Ingredients
- 3 Quarts chicken broth
- 3 C rice
- 3 Eggs
- Lemon juice to taste
- Salt to taste
- Pepper to taste
Directions

Bring broth to a boil

Reduce heat

add rice and cover and summer until rice is tender, about 20 minutes

In a small bowl beat eggs and lemon juice(3T)

Stirring constantly, add 1 cup of of soup, a little as a time.

Stir mixture into soup in pan and heat. Do not boil! Season with salt and pepper

Serve immediately with light rolls

Note: 2 oz rice makes thinner soup.
