Greek Lemon-Rice Soup

Serves 4 people

Ingredients

  • 3 Quarts chicken broth
  • 3 C rice
  • 3 Eggs
  • Lemon juice to taste
  • Salt to taste
  • Pepper to taste

Directions

  1. Bring broth to a boil

  2. Reduce heat

  3. add rice and cover and summer until rice is tender, about 20 minutes

  4. In a small bowl beat eggs and lemon juice(3T)

  5. Stirring constantly, add 1 cup of of soup, a little as a time.

  6. Stir mixture into soup in pan and heat. Do not boil! Season with salt and pepper

  7. Serve immediately with light rolls

  8. Note: 2 oz rice makes thinner soup.
