Cherry Pie

Cook time: 50 minutes

Ingredients

  • 6-8 c fresh or frozen tart cherries
  • 1 to 1 1/2 c granulated sugar
  • 6 T cornstarch
  • 1/4 T almond extract
  • Favorite pie crust (Hadden's Pie Crust)

Directions

  1. place cherries in medium saucepan and place over heat, cover.

  2. after the cherries lose considerable juice, which may take a few minutes, remove from heat

  3. In a small bowl, mix the sugar and cornstarch together

  4. Pour this mixture into the hot cherries and mix well

  5. Add the almon extract and mix

  6. Return the mixture to the stove and cook over low heat until thickened. stirring frequently.

  7. Remove from the heat and let cool

  8. If the filling is too thick add a little of water

  9. if too thin, add a little more cornstarch

  10. Preheat over to 375

  11. put in the prepared pie dough

  12. cut slits on top and bake for 50 min
