Ingredients
- Recipe:
- 200g thinly sliced Beef
- 400g Rice
- 550ml Water
- 100g Tofu
- 1 soft boiled Egg
- Spring Onions
- Sliced Pickled Ginger
- Chili Flakes
- Sauce:
- 100ml Water
- 100ml Mirin
- 50ml Soy Sauce
- 2 tbsp brown sugar
- optional: some Dashi
- 1/2 Onion
- 1/2 Ginger
Directions

Instructions:

Rice
-
Start by making your Rice
-
Thoroughly wash your rice until the water runs clear
-
Leave the rice soaking in water for at least 30 minutes
-
Add the rice to a pot or saucepan with 550ml of water
-
Put on a lid and heat up the rice until it begins to boil, turn the heat down to medium-low and wait for 10 minutes

After 10 minutes or once the water has disappeared from the rice, turn off the heat and let steam in the pot for another 10 minutes

Tofu
-
Lay the tofu onto a paper towel lined sheet tray then place a few more paper towels on top
-
Place something heavy onto the tofu to weigh it down for 1 hour and allow it to drain

let it rest for some minutes
-
for more flavor, marinate the tofu beforehand
-
cook it with oil in a nonstick pan on medium heat til it has some color
-
add some salt or spices of your choice
-
let it rest for some minutes
-
Sauce
-
Add 100ml water, 100ml of mirin, 50ml of soy sauce, 2 tbsp of brown sugar and a sprinkle of dashi fish stock into the pan you will use to cook the beef
-
Cut half an onion into thin slices and add to the liquid as well
-
Turn to a high heat with the lid on
-
Once it starts to boil, add your thinly sliced beef and cook for a few minutes until cooked through

if you like, add your Tofu for more Flavour
-
Let the Beef Stew in the sauce for around 5 minutes

Soft boiled Egg
-
cook your egg for 6 minutes
-
then put in ice water and peel it
-
if you want more flavour on your egg, do this marinade
-
Marinade:

Soy Sauce
-
Mirin
-
Sake or Water
-
Sugar
-
cook it for 1 Minute after boiling
-
you can marinade the egg for just a few hours or overnight
-
Finally
-
Place your Rice into a Bento Box or anything else and layer your beef on top
-
Drizzle some Sauce along with it
-
Garnish with your soft boiled Egg, Spring Onions, Tofu, pickled ginger and some chili flakes
