- -200g Soba Noodles
- Dipping Sauce:
- -60ml sake
- -120ml mirin
- -2g kombu
- -150ml water
- -120ml soy sauce
- -12g bonito flakes
- -Toppings:
- -green onions
- -nori seaweed
- -wasabi

Instructions:

In a small pot combine sake, mirin and boil for some minutes. Add water and kombu, wait until boiling again. Turn off the heat and add soy sauce and bonito flakes. Let simmer for 2 minutes, then filter everything through a sieve.

Cut nori into thin strips and green onions into small pieces.

Prepare the soba noodles according to package directions. After the soba noodles are ready, drain the water and rinse them under cold water. After this chill them in ice water for a couple of minutes and strain again.

Place soba on a plate and top with sliced nori seaweed. Serve with dipping sauce, sliced green onions and wasabi. Put some green onions and wasabi into the dipping sauce for extra flavor.
