- -20g Kombu

- -20g Bonito Flakes

- -1 tbsp Sake
- -2 tbsp Mirin
- -3 tbsp Soy Sauce
- -Pinch of Salt
- -Toppings:
- -grated Daikon/Radish
- -Green Onions

Instructions:

Put kombu seaweed and dried mushrooms in water and bring to a boil. When the water is about to boil, turn off the heat and add bonito flakes and simmer for 4 minutes. Then filter everything through a sieve.

Grate the daikon or radish, then put into water. Cut the spring onions into small pieces.

Prepare the soba noodles according to package directions. After the soba noodles are ready, briefly put them in cold water.

Pour the soup into a bowl and place your soba noodles over it. Squeeze out the water to serve the radish and add some green onions.
