Ingredients
- 2.5-3lb Eye Roast
- 1 tsp Kosher Salt
- 1 tsp dried, crushed Rosemary
- 3/4 tsp Pepper
- 3/4 tsp Onion Pepper
- 1/2 tsp Paprika
Directions

Set roast out 1 hour before preparing.

Preheat oven to 500’.

Dry roast w/ paper towels & rub with olive oil.

Combine all spices & season all sides.

Roast 15 minutes.

Reduce heat to 300’.

Roast 40-50 minutes more. (check after 35 minutes).

Roast should reach 125’.

Let rest 15 minutes.
