Eye of Round Roast

Ingredients

  • 2.5-3lb Eye Roast
  • 1 tsp Kosher Salt
  • 1 tsp dried, crushed Rosemary
  • 3/4 tsp Pepper
  • 3/4 tsp Onion Pepper
  • 1/2 tsp Paprika

Directions

  1. Set roast out 1 hour before preparing.

  2. Preheat oven to 500’.

  3. Dry roast w/ paper towels & rub with olive oil.

  4. Combine all spices & season all sides.

  5. Roast 15 minutes.

  6. Reduce heat to 300’.

  7. Roast 40-50 minutes more. (check after 35 minutes).

  8. Roast should reach 125’.

  9. Let rest 15 minutes.
