Caprese Farfalle

Serves 6 people

Ingredients

  • 1/2 lb Farfalle
  • 8 oz Fresh Mozzarella Pearls or cubed
  • 2 C Grape Tomatoes, halved
  • 1/4 C Fresh Basil leaves, thinly sliced
  • 1/4 C Olive Oil
  • 1/4 C Balsamic Vinegar
  • 2-3 Tbsp Lemon Juice
  • 1 clove garlic, minced
  • 1 tsp Italian Seasoning
  • 1/4 tsp Kosher Salt
  • 1/4 tsp Pepper

Directions

  1. Combine Olive Oil, balsamic vinegar, lemon juice, garlic, Italian seasoning, salt & pepper. Whisk or shake until blended.

  2. Cook pasta, drain & rinse w/ cold water

  3. In large bowl mix the cooled pasta with tomatoes, mozzarella and basil. Drizzle with prepared dressing.

  4. 350 calories / serving (serves 6)
