Greek Style Green Beans

Ingredients

  • 2 cups fresh green beans cut into 2 inch pieces
  • 1/2 small sweet onion, cut into thin wedges
  • 1 tablespoon olive oil
  • 1 small tomato, cut into eighths
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • Dash pepper

Directions

  1. Place the beans in a saucepan and cover with water; bring to a boil.

  2. Cook for 3-4 minutes or until crisp

  3. tender; drain.

  4. In a small skillet, sauté onion in oil

  5. for about 5 minutes or until tender.

  6. Reduce heat. Add the tomato, oregano, salt and pepper; cook one minute longer or until heated through.
