Ingredients
- 3 Tbs flour
- 3 Tbs oil
- 1 onion, chopped
- 1 green pepper, chopped
- 1/2 cup chopped celery
- 1/2 pound smoked sausage
- 1 clove garlic, minced
- 2 tsp soy sauce
- 2 Tbs Worcestershire sauce
- 2 tsp salt
- dash pepper
- 1 whole chicken, boiled and chopped
- 8 cups chicken broth
- 1 can Italian-style tomatoes
- 1 cup frozen okra
- 3 tsp gumbo file
- hot rice

Brown flour in oil.

Saute onion, green pepper, and celery. Add sausage and cook for a few more minutes, adding garlic at the end.

Use chicken broth from the boiled chicken. Add all other ingredients except gumbo file. Simmer until vegetables are done.

After gumbo has cooled, dissolve file in a cup of liquid, then add slowly back to pot. Simmer again for a few minutes to season with the file. Enjoy.
