Mexican Chicken Soup

Ingredients

  • 1 T canola oil
  • 1 small onion, diced
  • 1 jalepeno, diced
  • 2 garlic cloves, minced
  • 2 t cumin
  • 5 c chicken broth
  • 1 1/2 lb chicken breast, cut in strips
  • 2 c mild salsa
  • salt and pepper

Directions

  1. Saute onion and jalepeno 5 min, add garlic and cumin for 30 sec more.

  2. Add broth, bring to simmer. Add chicken and cook until no longer pink, 3 min. Stir in salsa, simmer. Add salt and pepper to taste.
