Ingredients
- olive oil
- 1/4 cup find dry bread crumbs
- 1 10 oz package chopped frozen spinach
- 3 cups cooked rice
- 3 eggs, beaten
- 1 cup ricotta or cottage cheese
- 1 cup parmesan cheese
- dash pepper
Directions

eheat oven to 350.

Grease bottom and sides of 8×8×2 inch pan or 2 quart baking dish. Cover with bread crumbs.

Squeeze water from spinach.

Mix spinach, rice, 3 eggs, ricotta, parmesan and pepper. Mix well.

Turn into dish.

Bake 350 for 45 minutes or until firm.
