Ingredients
- 2 tablespoons olive oil
- 1 cup onion, chopped
- 1 cup mushroom (can be omitted but I LOVE mushrooms)
- 1 cup celery, diced
- 2 carrots, diced
- 1 tablespoon minced garlic
- 1 28 oz. can diced tomatoes or tomato puree
- 4 cups ham broth
- 4 cups chicken broth
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 teaspoon chili powder (optional)
- 1/4 teaspoon cayenne pepper (optional)
- ham bone and whatever meat is on the bone (optional)
- 2 tablespoons apple cider vinegar

Sauté onions, mushrooms (if using) and celery in 2 tablespoons olive oil for about 5 minutes. Put everything, including the sautéed veggies in a crockpot, cook on low for 8 – 10 hours. After soup is done but before serving at the table stir in vinegar. I know the vinegar sounds weird but it really adds flavor to the soup.
