Bean Soup Recipe

Soak beans for 2 hours, discard water

Ingredients

  • 2 tablespoons olive oil
  • 1 cup onion, chopped
  • 1 cup mushroom (can be omitted but I LOVE mushrooms)
  • 1 cup celery, diced
  • 2 carrots, diced
  • 1 tablespoon minced garlic
  • 1 28 oz. can diced tomatoes or tomato puree
  • 4 cups ham broth
  • 4 cups chicken broth
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 teaspoon chili powder (optional)
  • 1/4 teaspoon cayenne pepper (optional)
  • ham bone and whatever meat is on the bone (optional)
  • 2 tablespoons apple cider vinegar

Directions

  1. Sauté onions, mushrooms (if using) and celery in 2 tablespoons olive oil for about 5 minutes. Put everything, including the sautéed veggies in a crockpot, cook on low for 8 – 10 hours. After soup is done but before serving at the table stir in vinegar. I know the vinegar sounds weird but it really adds flavor to the soup.
