Tea Marinated Florida Beef Roast

Ingredients

  • 4-5 lb chuck or shoulder roast
  • Cooking oil
  • Strong tea, including leaves
  • 1 c. chili sauce
  • 3 T. brown sugar
  • Juice of 2 lemons
  • 1/4 t. celery salt
  • 1/2 c. onion finely chopped
  • 2 T. Bacon fat
  • 1c. water
  • 1 t. paprika
  • 3 T. vinegar
  • 1 t. salt

Directions

  1. Brown roast in oil; place in large saucepan.

  2. Simmer, uncovered with the tea covering three-forths of the roast for 3-5 hours or until tender. Drain off tea; place meat in baking dish. Combine remaining ingredients; pour half the sauce over roast. Bake uncovered at 325 degrees for 45 minutes. Serve remaining sauce over meat.

  3. Yield 8-10 servings
