Tea Marinated Florida Beef Roast

Ingredients
- 4-5 lb chuck or shoulder roast
- Cooking oil
- Strong tea, including leaves
- 1 c. chili sauce
- 3 T. brown sugar
- Juice of 2 lemons
- 1/4 t. celery salt
- 1/2 c. onion finely chopped
- 2 T. Bacon fat
- 1c. water
- 1 t. paprika
- 3 T. vinegar
- 1 t. salt
Directions

Brown roast in oil; place in large saucepan.

Simmer, uncovered with the tea covering three-forths of the roast for 3-5 hours or until tender. Drain off tea; place meat in baking dish. Combine remaining ingredients; pour half the sauce over roast. Bake uncovered at 325 degrees for 45 minutes. Serve remaining sauce over meat.
