Chicken and Vegetable Stir Fry

Ingredients

  • 1 t canola oil
  • 6 boneless, skinless chicken breasts, cut into strips
  • 1 lb frozen stir-fry vegetables
  • 2 t fresh ginger, crushed
  • 1 t minced garlic
  • 1/4 c water
  • 2 T soy sauce

Directions

  1. Heat the oil in a large skillet or wok over high heat. Add the chicken and cook, stirring constantly, for 30 secondes, or until no longer pink on the surface.

  2. Add the vegetables, ginger and garlic. Cook, stirring constantly, for 2 minutes, or until the vegetables are almost tender.

  3. Add the water and soy sauce.

  4. Cover and steam for 3 minutes, or until the chicken is cooked through and the vegetables are tender-crisp.
