Elephant Ears

Ingredients

  • Shortening
  • 1/4 cup (1/2 stick) margarine or butter
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup milk
  • 2 tablespoons sugar
  • 1 teaspoon ground cinnamon
  • Sugar

Directions

  1. Heat oven to 425º.

  2. Grease cookie sheet with:

  3. Shortening

  4. Melt in saucepan over low heat, then set aside:

  5. 1/4 cup (1/2 stick) margarine or butter

  6. Mix in medium bowl with wooden spoon:

  7. 1 cup all-purpose flour

  8. 2 tablespoons sugar

  9. 1/2 teaspoon baking powder

  10. 1/2 teaspoon salt

  11. Stir in to make a dough:

  12. 3 tablespoons of the melted margarine or butter

  13. 1/3 cup milk

  14. Sprinkle a clean surface (such as a kitchen counter or bread board) with

  15. flour. Put dough on surface. Roll ball of dough around 3 or 4 times.

  16. Knead dough quickly and lightly by folding, pressing and turning. Repeat

  17. 10 times. Roll or pat dough into 9 × 5-inch rectangle.

  18. Mix in small bowl:

  19. 2 tablespoons sugar

  20. 1 teaspoon ground cinnamon

  21. Brush dough with the rest of the melted margarine or butter, then

  22. sprinkle with the sugar-cinnamon mixture.

  23. Roll dough up tightly, beginning at short end of rectangle. Pinch edge

  24. of dough into roll to seal. Adult help: Cut roll into 4 equal pieces

  25. with sharp knife. Put pieces, cut sides up, on cookie sheet, then pat

  26. into 6-inch circles.

  27. Sprinkle circles with:

  28. Sugar

  29. Bake 8 to 10 minutes or until edges are golden brown. Immediately remove

  30. elephant ears from cookie sheet with spatula to wire rack. Cool.
