Cauliflower Puff

Ingredients

  • 1 (10 ounce) package frozen cauliflower, cooked until very tender and drained
  • 2 large eggs, separated
  • 2 T heavy cream
  • 1/2 t salt
  • Pepper to taste
  • 2 T finely chopped scallion
  • 1/2 cup grated cheddar cheese
  • 2 T butter, melted
  • 2 T grated Parmesan cheese

Directions

  1. In an electric blender whirl until smooth the cauliflower, egg yolks, milk, salt and pepper.

  2. In a medium bowl, beat the egg whites until stiff: gradually fold in the cauliflower mixture, scallion and cheddar cheese.

  3. Spread over the bottom of a buttered 9 inch pie plate. Drizzle with butter; sprinkle with the Parmesan cheese.

  4. Bake in a preheated 375 degree oven until golden brown and set 20 minutes. Cut into wedges and remove with wide spatula.
