Ingredients
- 1/2 cup flour
- 1/4 tsp salt
- 1/2 cup chunky peanut butter
- 1/4 cup solid vegetable shortening
- 1/2 tsp vanilla extract
- 1 cup packed dark brown sugar
- 2 eggs
- 1 1/4 cups semisweet chocolate chips
- 1/3 cup chopped peanuts

Preheat oven to 350 F. Line an 8 × 8 baking pan with nonstick foil overhanging on two sides. Set aside. Sift the flour and salt onto a sheet of waxed paper. Set aside. In a medium size bowl, beat the peanut butter, shortening, and vanilla together on medium speed for one minute. Add the brown sugar. Beat until combined. Add the eggs, one at a time. Beat well after each addition. Reduce speed to low. Add the flour mixture. Beat just until combined. Scrape batter into prepared pan. Smooth the top using an offset spatula. Bake for 28 minutes or until set in the center. Remove from the oven and sprinkle with chocolate chips. Allow to stand for 5 minutes. Spread melted chips evenly over the top using an offset spatula. Sprinkle with the chopped peanuts. Place on a wire rack to cool completely.
