Broiled Shrimp Scampi

Ingredients

  • 1 lb raw shrimp, peeled and deveined
  • 1/4 c olive oil
  • 2 t minced garlic
  • 2 t lemon juice
  • 1/4 t salt
  • 1/4 t ground black pepper
  • 2 t grated parmesan cheese

Directions

  1. Preheat the broiler. Rinse the shrimp and pat dry. In a small bowl, mix together the oil, garlic, lemon juice, salt and pepper. Toss the shrimp in the oil mixture and place on the baking sheet. Sprinkle with the cheese. Cook for 6 to 8 minutes, or until the shrimp is opaque (watch carefully). Serve immediately.
