LC Pulled Pork

The highest the carb count would be for the entire recipe is about 14 g total – 3 fiber = 11 net. If you strain out the onion, it’s probably a bit lower than that.

Ingredients
- 1 small onion, chopped
- 3-4 lb pork loin roast
- 6 Tbsp LC ketchup
- 1 tsp soy sauce
- 1 tsp mustard
- 1 tsp paprika
- 1 tsp fresh ground pepper
- 3 drops Sweetzfree, a few packets of Splenda, or equivalent - 1 Tbsp or so of sugar sweetness

- Place the onion in the bottom of the crock pot, then the roast.

- Stir together the remaining ingredients except sweetener, pour over meat.

- Cook on low for about 8 hrs or until done.

- Remove the meat and either shred or slice it.

- Now here’s the tasty part: pour the watery leftover liquid through a sieve into a saucepan, and simmer until most of the water is gone. I actually overdid it and the consistency was like tomato paste.

- Once cool, add sweetener. Serve the meat with this sauce.
