Chili is good served with grated cheese, chopped onion and jalapeno peppers on the side as toppings (optional). Also crackers or cornbread. I prefer using “Gebhardts” brand chili powder.
More of a chili stew…some people like beans in their chili…this has a little different twist…
- Half of a 3 ounce bottle of Gebhardts chili powder
- water as needed
- medium potatoes cubed
- diced tomatoes
- medium onion chopped
- ground cumin
- bacon grease or olive oil
- garlic minced
- whole cumin seed
- salt to taste
An extra special chicken enchilada.
Original recipe called for using left over turkey. I didn’t always have turkey, and the chicken seems to be much moister when prepared as directed; my family wants it mixed more often than just when I had left over turkey!
This can be made the day ahead for company dinner and is very impressive as a company meal. It also freezes very well.
You can serve a tossed salad or any other vegetable of your choice…guacamole, salsa and chips work well. And, I guess you could do the traditional rice and beans…but my family prefers a green vegetable as a side and maybe a congealed salad.

- Campbell's Condensed Cheddar Cheese soup
- Pace Thick & Chunky Picante Salsa
- each 8-inch Flour tortillas
Just a good and quick stand by.

You can “build” this in your glass casserole dish…but because some don’t care for all of the ingredients I keep each ingredient separate and let each person build their own.
This is good as is or you can use the “Spicy French Salad Dressing” in this book.
My friend, Sue, never used the Ranch Style Beans…but I tried this once and we loved it.

You can make this and serve in frosted mugs with a long handled ice tea spoon or in a large chilled bowl with “Tostitos Scoops” on the side for appetizer size servings.
Be careful in adding the jalapeno, Tabasco’s and Cajun sauces and spices as it is pretty hot…you might want to just add half the amount called for and then adjust to your personal preference.
My original recipe also called for adding Tequila…since I serve this and children might eat it, I don’t add the tequila.

These sound like they would be really hot…but I don’t like hot stuff and I loved these! I think the trick is cleaning out all those ribs and seeds. (You might want to use plastic gloves to protect your fingers.)
You can use one of those “grill pans” that have little holes in it for grilling fish or vegetables.
