These muffins are made with coconut flour, which has a fairly mild coconut taste. They can be made with either blueberries or rasberries.
Can add mashed banana and SF choc chips, too.
- coconut flour
- melted butter
- sugar substitute equivalent - use liquid
- heavy cream
- raspberries or blueberries
- eggs at room temperature
basic muffin has 6g carb each
Add-ins:
2 tsp cinnamon
fresh blueberries
3-4 packets sugar-free apple cider mix (reduce sweetener to 1 cup and add 1 tsp cinnamon)

- almond flour
Muffins will keep in the fridge for about a week and freeze well

If making 12-ct muffins or 8-ct mini-loaves, there will need to be 2 pans; too much batter!
